カレーの常温保存は実は危険です｡
たとえ十分に加熱してあっても、温めたカレーをそのまま常温で置いておくと、
食中毒の原因菌であるウェルシュ菌が繁殖する恐れがあるのです｡

この菌、100℃でも死なずに逆に活性化し、酸素が無いところでも増殖するということで、
加熱して他の菌が死に絶え、酸素も少なくなったカレールーの中でウェルシュ菌が増殖し、
食中毒を引き起こす可能性があるのだとか｡
（43～49℃辺りで活発に増殖します。）

とはいえ(極稀に死亡例もありますが)大抵は下痢程度で
命に関わるわけでもないので、私だったら気にしないで食べますが、
